Sometimes you need to treat yourself. My favorite ways to treat myself are a trip somewhere (even if just outside the city), a new shirt, a unique cocktail, a delicious meal, and sleeping in (this last one probably happens too often lately to count anymore though. Yesterday, I craved something sweet, but with the grocery stores closed in Germany, I had to scrounge around the kitchen and the large bag of apples became my inspiration.
Before moving to Germany, I had an aversion to cooked apples and all cooked fruit for that matter. At camp each summer, when people were going crazy over the apple cobbler, I could not fathom why. The thing is, I LOVE cinnamon and this dish was smothered in it. However, there was something about the mushy apples I could not move past. Then I moved to Germany, and the Germans’ love for apples quickly changed me through my first bite of Apfelkuchen, and then several other dishes incorporating apples, apple sauce, and/or apple juice.
So yesterday, I decided cooked apples atop some good ole fashioned American pancakes would perfectly alleviate my sweet tooth. There are several ways to cook apples: boiling, baking, grilling… but I went with the lazy man’s method: sautéing (I could have gone even lazier if we had a microwave). Sautéing apples is super easy and makes for a delicious sweet topping for all sorts of dishes: pancakes, ice cream, cakes, you name it!
Recipe: Warm Apple & Brown Sugar Topping
- 4 apples, peeled
- 1/4 cup butter
- 1/2 cup brown sugar
- 1/2 tbsp cinnamon
- 1/2 cup water
- Peel, core, and slice apples into cubes.
- Melt butter over medium heat in sauce pan.
- Add apples. Cook for ~8 minutes.
- Add in water, brown sugar, and cinnamon.
- Let boil until desired apple softness.
- Serve warm.
Use whatever apples, and add to whatever dessert, you like.
