this find is precisely why i love pinterest.
So I wasting away my daily allotted Pinterest time slot on Sunday when I repinned something… something special. This was not your usual, ‘maybe someday’ repin. This one had to happen immediately. Honestly, it looked too good to be true. In following the pin, I was brought here to a blog I had not see before. The writer had this delicious looking photo of pancakes that actually looked like pancakes that claimed to be flourless. How can this be? They look like normal pancakes. Don’t normal pancakes need flour?
Flourless, Gluten Free Pancakes via Blogilates
The answer is no – and they can still be delicious! Oh, and they take a whole 5 minutes to make. I think I could live off these. Not joking.
Blogilates’ 100% Natural, Flourless, Gluten Free Pancakes
2 eggs + 1 mashed up banana + cinnamon. Mix together. Pour on hot skillet. Flip. Serve.
That is it. Like seriously unreal. But I have to admit, at first I had issues. I cannot work a spatula properly and was too impatient to let the skillet get real hot. Even the super ugly ones tasted fine though – so if you’re inept as I am with a spatula, you’re good to go.
First attempt failure = lesson learned: leave time for skillet to get really hot throughout. This sat in the skillet a good while and the pancakes should take no longer than a minute on each side.
Oh, and let’s not forget to mention that the whole recipe is less than 250 calories – pretty filling and fulfilling meal if you ask me.
Lastly, I totally forgot to tell y’all last week, since you don’t already get enough of me, that I did an obviously awesome guest post over at Emily’s blog and you should probably go read it. Latas.

However, did you seriously have pancakes, of whatever kind, without at least a taste of real butter and pure maple syrup?

None of that syrup that I like here in Germany. I do add a little sugar sometimes though, but really the banana makes them sweet enough.

These look really good! I don’t care about gluten-free, but I do care about yummy! Maybe I should try them =) O never seem to figure out how to get those thick American-style pancakes – German pancakes are really flat and a lot more like crêpes!
